Green Breakfast Enchiladas

  • 1 chicken breast
  • 1 bunch fresh cilantro
  • 2 cloves garlic, for cooking the chicken
  • 1/4 onions
  • some salt

  • 8 tomatillos, for the green sauce
  • 3 cuaresmeño chiles, trimmed and seeded, for the green sauce
  • 1/2 white onions, cut into quarters, for the green sauce
  • 1 clove garlic, for the green sauce
  • 2 cups fresh cilantro, ½ for cooking the sauce and ½ for blending, for the green sauce
  • 1 pinch salt, for the green sauce
  • 1 tablespoon allspice berry, for the green sauce
  • 1/4 cups vegetable oil, for frying the tortillas and the green sauce
  • 12 corn tortillas
  • some sour cream, for serving
  • some queso fresco, for serving
  • some white onion, cut into rings, for garnish
  • some fresh cilantro, for garnish
  • 1 cup chicken broth, for the green sauce

Easy
  • Cook chicken breast in water with cilantro, onion, garlic, and salt until cooked through, for about 40 minutes. Cool and shred.
  • For the green sauce: Heat a small pot with water over medium heat. Cook tomatoes with chile, onion, garlic, and ½ cup of cilantro until tomatoes turn color. Strain and transfer to a blender. Add cilantro, salt, and allspice. Blend until smooth.
  • Heat a pot over medium heat with a tablespoon of oil. Fry sauce until reduced and thickened. Adjust seasoning. Set aside.
  • Heat a skillet over medium heat with the remaining oil. Fry tortillas slightly. Remove and drain on a paper towel-lined plate to remove excess oil.
  • Stuff tortillas with shredded chicken. Fold and place on a plate. Spoon green salsa over the enchiladas. Serve delicious green enchiladas topped with cheese, cream, onion rings, and cilantro.
