Green Tamal Casserole

  • 1 teaspoon baking powder, for the tamal dough
  • 1 tablespoon salt, for the tamal dough
  • 800 grams masa mix for tamales, for the tamal dough
  • 2 cups chicken broth, for the tamal dough
  • some corn husk, for the tamales
  • 500 grams chicken breast, cooked and shredded, for the tamales
  • 1 cup Manchego cheese, shredded, for the tamales

  • For the green sauce: In a pot with water and coarse salt, cook tomatillos and serrano chiles over medium heat for 8 minutes. Transfer tomatillos and serrano chiles to a blender, add onion, garlic, cilantro, and salt and blend until smooth. In a skillet, heat oil over medium heat. Pour in green sauce and cook for 5 minutes. Season with pepper. Set aside.
  • In a bowl, soften lard with a mixer for 5 minutes or until it turns color. Add baking powder, salt, masa mix for tamales, and chicken broth little by little. Mix until a homogeneous tamal dough is obtained making sure it is not soggy.
  • Line a previously greased iron cast skillet with corn husks. Place a layer of tamal dough and top with a layer of green sauce. Top with a layer of shredded chicken breast. Place a layer of tamal dough on top. Cover with aluminum foil. Bake for 45 minutes at 356 ºF or until cooked through. Place a baking dish with water in the oven to keep tamal dough from drying out.
  • Remove green tamal casserole from the oven. Remove aluminum foil and spread Manchego cheese on top. Bake uncovered for 15 minutes or until cheese broils and turns golden brown. Serve green tamal casserole and spoon green sauce over.
