  • 2 cloves garlic
  • 7 guajillo chiles, trimmed and seeded
  • 1 cup butter, at room temperature
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon salt
  • 1/2 tablespoons pepper
  • 1 chicken, skin-on, butterflied (3 lb)

  • Preheat oven to 428 °F.
  • In a griddle, roast garlic and guajillo chiles. Transfer ingredients to blender and blend until a fine powder is obtained.
  • In a bowl, mix butter with chile and garlic powder, onion powder, oregano, salt, and pepper.
  • Baste chicken with butter mixture. Make sure to reach between skin and meat. Place chicken on a baking sheet. Bake for 45 minutes.
  • Remove chicken from the oven. Baste again with butter mixture. Lower oven's temperature to 356 °F.
  • Bake for 15 more minutes or until chicken is cooked through. Remove and serve guajillo roast chicken with green salad on the side.
