Honey Chipotle Chicken

  • 2 tablespoons butter, for the honey chipotle glaze
  • 2 cloves garlic, finely chopped, for the honey chipotle glaze
  • 1/4 cups lime juice, for the honey chipotle glaze
  • 1 cup honey, for the honey chipotle glaze
  • 1/4 cups ground chipotle chile, for the honey chipotle glaze
  • 1 tablespoon Dijon mustard, for the honey chipotle glaze
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 2 chicken breasts, skinless and boneless
  • some fresh cilantro

  • For the pico de gallo: In a bowl, mix mango, red onion, cucumber, tomato, manzano chile, cilantro, olive oil, and lime juice. Season with salt and pepper.
  • For the honey chipotle glaze: In a small pot over medium heat, heat butter and cook garlic, lime juice, honey, chipotle, and mustard. Season with salt and pepper. Cook until reduced.
  • On a grill skillet over medium heat, heat butter and oil, season chicken and sear until golden brown. Add honey chipotle glaze and spoon over constantly while cooking. Once cooked through, remove chicken and cut into strips.
  • Serve a bed of rice on a plate and place honey chipotle chicken on top. Garnish with pico de gallo and lemon.
