  • 1 chicken breast
  • salt and pepper
  • 2 eggs, whisked
  • 1/2 cups breadcrumbs
  • 1/2 cups potato chips, adobadas, crushed
  • 1/2 cups corn flakes
  • 1 tablespoon cornstarch
  • vegetable oil, for frying
  • 1/2 cups honey, for the honey chipotle sauce
  • 6 chipotle chiles, dried, finely chopped, for the honey chipotle sauce
  • 2 tablespoons rice vinegar, for the honey chipotle sauce
  • 1 tablespoon ginger, finely chopped, for the honey chipotle sauce
  • 2 tablespoons soy sauce, for the honey chipotle sauce
  • 1 tablespoon garlic, finely chopped, for the honey chipotle sauce
  • 2 tablespoons cornstarch, for the honey chipotle sauce
  • 1/4 cups water, for the honey chipotle sauce
  • 1/4 cups lime juice, for the honey chipotle sauce
  • 2 tablespoons Sriracha sauce, for the honey chipotle sauce
  • green onion stalks, chopped, for garnish

  • Cut chicken breast into strips. In a bowl, place chicken strips and mix with egg, salt, and pepper. Set aside.
  • In a bowl, mix breadcrumbs, crushed adobadas chips, corn flakes, and cornstarch. Bread chicken completely with previous mixture.
  • In a pot, heat oil and fry chicken strips until golden brown. Drain on a paper towel-lined plate. Set aside.
  • For the honey chipotle sauce: In a small pot, cook honey, chipotle chile, vinegar, ginger, soy sauce, and garlic. While mixture comes to a boil, hydrate cornstarch in a bowl with water and add it to the sauce. Add lime juice and Sriracha. Cook until thick and season.
  • In a bowl, toss chicken strips making sure the sauce covers them completely.
  • Serve honey chipotle chicken tenders on a board garnished with green onion stalks and with grilled corn on the side.
