Mango Habanero Chicken Wings

  • 1 cup mango
  • 2 Habanero chiles, charred, trimmed, seeded, and rehydrated
  • 1/4 onions
  • 1 cup mango juice
  • 4 tablespoons raw sugar
  • salt and pepper
  • 1 kilo chicken wings
  • celery, for garnish 
  • ranch dressing
  • some vegetable oil, for frying

  • Preheat oven to 356 ºF.
  • In a blender, combine mango, Habanero chiles, onion, and mango juice and blend until smooth.
  • In a pot, heat a bit of oil. Pour previous mixture into the pot and cook for 5 minutes over medium heat. Add raw sugar, salt, and pepper. Let cool.
  • In a baking dish, place chicken wings and pour ¾ of previous mixture.
  • Bake for 25 minutes covered with aluminum foil.
  • Remove from oven and brush with remaining mango Habanero sauce.
  • Bake uncovered for 7 more minutes until golden brown.
  • Serve mango Habanero chicken wings with ranch dressing garnished with celery.
