  • In a pot with salted water and onion, add chicken breast and cook for 30 minutes. Drain chicken breast, shred, and let cool.
  • In a bowl, mix shredded chicken breast, mayonnaise, carrots, green beans, and parsley until a homogeneous consistency is obtained.
  • In a small pot with salted water, cook yellow potatoes for 20 minutes or until tender. Drain yellow potatoes and mash until a smooth and velvety consistency is obtained. Let cool.
  • Peel, seed, and trim yellow ajíes. Cut yellow ajíes into chunks and transfer them to a blender. Add oil and blend for 3 minutes until a smooth consistency is obtained.
  • Pour blended mixture into the mashed potatoes and add lime juice. Gently mix until a smooth consistency is obtained. Season with salt and pepper.
  • On a plate, place a round cookie cutter. Add a layer of mashed potatoes mixture and top with a layer of chicken breast mixture. Add a layer of avocado and top with a layer of tomato. Place a layer of mashed potatoes mixture on top.
  • Gently unmold Peruvian chicken causa limeña. Garnish Peruvian chicken causa limeña with hard-boiled egg, avocado, black olives, and lettuce.
