Salsa Verde Chicken Sopes

  • 500 grams masa dough, 1.7 ounces per sope
  • some water
  • some salt
  • some vegetable oil
  • 1/2 onions, cut into quarters
  • 2 cloves garlic
  • 8 tomatillos, cut into halves
  • 4 serrano chiles
  • 1 tablespoon cumin seeds
  • 2 allspice berries
  • 1/2 cups fresh cilantro
  • 1 cup chicken broth
  • 1 onion, sliced
  • 1/2 kilos chicken, cooked and shredded

  • some sour cream, for garnish
  • some queso fresco, crumbled, for garnish
  • some serrano chile, cut into round slices, for garnish
  • some tomatillo, cut into slices, for garnish

  • Knead masa dough with as much water and salt as needed until a moist dough is obtained. Portion into 1.7-ounce small balls. Using a tortilla press, make sopes.
  • Heat a griddle over high heat. Cook sopes until cooked through, flipping over halfway through cooking. Remove. Using your fingers, pinch the sides up to form a tiny wall around the edge. Set aside covered.
  • In a deep skillet, heat one tablespoon of oil. Cook onion, garlic, tomatillos, serrano chile, cumin, allspice berries, and cilantro until tomatillos turn color.
  • Pour chicken broth. Cook until vegetables fall apart and the liquid reduces. Cool slightly. Transfer previous preparation to a blender and blend to a smooth sauce.
  • In a saucepan, heat another tablespoon of oil. Cook sliced onion until bright. Add chicken. Cook for 5 minutes. Pour sauce. Bring to a simmer. Cook for 10 more minutes or until cooked through. Season to taste.
  • Fry sopes with a bit of oil. Drain on a paper towel-lined plate. Spread a bed of beans. Add chicken. Garnish with cream, cheese, serrano chile, and tomatillo.
