Spanish Garlic Chicken

  • 4 tablespoons garlic, cut into thin slices
  • 1 cup guajillo chile, cut into slices
  • 4 chicken breasts
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 cups parsley, finely chopped, for garnish

  • For the garlic marinade: In a bowl mix oil, garlic, guajillo chile, and chicken. Marinate for 30 minutes. Reserve.
  • Heat a skillet over medium heat. Add chicken with marinade and cook for 15 minutes or until garlic is golden brown and chicken is cooked through. Season with salt and pepper. Serve chicken with garlic and guajillo chile topped with finely chopped parsley.
