  • For the esquites: In a pot, heat vegetable oil and fry onion until translucent. Add bacon and cook, stirring constantly, until golden brown.
  • Add yellow corn kernels, árbol chiles, and cilantro. Season with salt and pepper. Cook for 15 minutes. Add a bit of water to keep corn kernels from sticking to the pot. Once they are crispy on the outside, but slightly soft inside, set aside.
  • In a large bowl, place chicken wings. Add garlic powder, paprika, cumin, guajillo powder, pepper, salt, and vegetable oil. Toss to coat. Marinate for 20 minutes in the fridge.
  • In a skillet over medium-low heat, heat vegetable oil and fry chicken wings. Drain on a paper towel-lined plate. Set aside.
  • For the adobo sauce: In a bowl, mix sour cream, butter, and hot sauce. Mix with a whisk.
  • In a hot deep skillet, pour adobo sauce. Add chicken wings and cook for 10 minutes over low heat.
  • Serve spicy chicken wings with esquites garnished with cilantro and with guacamole on the side.
