  • 1 turkey breast, roll-cut
  • 1 cup goat cheese, for the stuffing  
  • 1 cup Gouda cheese, shredded, for the stuffing

  • 1 cup chicken broth, for baking the turkey
  • 2 cups tamarind concentrate, for the tamarind sauce 
  • 1 clove garlic, for the tamarind sauce 
  • 1/2 onions, for the tamarind sauce 
  • 1 dried chipotle chile, for the tamarind sauce 
  • 1 cup chicken broth, for the tamarind sauce 
  • 2 tablespoons butter, cut into cubes, for the tamarind sauce

  • Preheat oven to 356 ºF.
  • On a chopping board, place turkey breast. Stuff with goat cheese, Gouda cheese, pecans, and dried cranberries. Season with salt and pepper. Roll up and truss with kitchen twine to help it hold its shape.
  • On a baking dish, arrange carrots, leek, celery, and thyme. Place stuffed turkey breast on top and pour chicken broth into the baking dish. Cover with aluminum foil and bake for 15 minutes.
  • For the tamarind sauce: In a blender, combine tamarind concentrate, garlic, onion, chipotle chile, and chicken broth and blend until smooth. In a small pot, heat butter over medium heat. Transfer tamarind sauce to the pot. Cook and season with salt and pepper.
  • Remove stuffed turkey breast from the oven and pour tamarind sauce over. Return to oven and bake uncovered for 15 more minutes until cooked through.
  • Remove from oven and cut stuffed turkey breast in tamarind sauce into slices. Serve stuffed turkey on a plate and spoon a bit of tamarind sauce over. Garnish stuffed turkey breast in tamarind sauce with pecans, dried cranberries, and thyme.
