  • 6 Jalapeño chiles, large 
  • 1 queso fresco, small
  • 1/2 kilos sour cream, criolla
  • 1/2 onions, chopped 
  • water
  • salt
  • 3 limes, juice

  • On a griddle, char Jalapeño chiles over medium heat. Place charred chiles in a plastic bag and let sweat for 10 minutes.
  • Using a knife, cut open Jalapeño chiles lengthwise. Gently seed Jalapeño chiles so as not to tear them apart.
  • In a baking dish, add water, salt, and lime juice. Let Jalapeño chiles marinate for 10 minutes.
  • Drain Jalapeño chiles and let them air dry.
  • In a bowl, mix crumbled cheese and chopped onion.
  • Stuff Jalapeño chiles with cheese mixture. Serve authentic chiles capones on a plate spooned over with crema criolla.
