After-Christmas Empanadas

This recipe is the perfect way to transform your Christmas dinner leftovers into a delicious dish.   • 3 cups flour, for the empanada dough
  • 2 tablespoons sugar, for the empanada dough
  • 1/2 teaspoons salt, for the empanada dough
  • 1/4 cups vegetable oil, for the empanada dough
  • 1 cup water, for the empanada dough
  • 1 cup flour, for rolling
  • 2 cups romeritos, for the stuffing
  • 2 cups cod, for the stuffing
  • 2 cups turkey, for the stuffing
  • some vegetable oil, for frying

  • For the empanada dough: In a bowl, combine flour, sugar, salt, oil, and water. Knead to a soft dough.
  • On a floured surface, roll out the dough until it is 1-inch thick. Use a cookie cutter to cut dough into circles.
  • Place romeritos, bacalao, and turkey on top of the dough circles. Seal the empanadas by pressing the edges with your fingers.
  • Heat oil in a small pot. Fry empanadas over medium heat for 5 minutes or until golden brown. Place leftover Christmas dinner empanadas on a paper towel-lined plate to remove excess oil.
