  • For the chipotle sauce: In a blender, combine tomato purée, onion, salt, pepper, chipotle chiles in adobo sauce, and water and blend until smooth.
  • In a saucepan over medium heat, heat vegetable oil and fry chipotle sauce. Cook for 10 minutes and adjust seasoning.
  • For the meatballs: In a blender, combine egg, salt, pepper, rice, onion, cilantro, breadcrumbs, water, vegetable oil, and garlic and blend until smooth.
  • In a bowl, add ground beef and pour blended mixture in. Form meatballs with your hands. Stuff meatballs with hard-boiled eggs.
  • Place meatballs in the chipotle sauce and cook for 30 minutes. Adjust seasoning.
  • Serve classic meatballs in a soup bowl with plenty of chipotle sauce.
