  • In a pot over medium heat, heat olive oil, add onion and garlic, and fry for 3 minutes.
  • Add chayote, cauliflower, potatoes, and carrots, and fry for 5 more minutes. Season with salt and pepper.
  • Pour in water covering about 1 inch above the vegetables and cook for 10 minutes.
  • Transfer ¾ of the vegetables to a blender and blend until smooth.
  • Pour blended mixture back into the pot and cook for 5 more minutes. Adjust seasoning and remove from heat.
  • Serve dairy-free creamy vegetable soup hot garnished with cilantro.
