  • For the muéganos: Mix flour, baking powder, and lard. Add milk little by little until a dough is obtained.
  • Knead until a homogeneous and elastic dough is formed.
  • Using a rolling pin, roll out dough to 0.1-inch thickness. Using a knife, cut dough into small-sized squares. Set aside.
  • In a small pot, heat oil and fry dough squares little by little to keep oil from overflowing. Fry muéganos until golden brown. Drain on a paper towel-lined plate and set aside.
  • For the piloncillo syrup: In a pot with water, cook piloncillo for 10 minutes until a thick syrup is obtained.
  • Spoon muéganos over with piloncillo syrup. Using 2 spoons, firmly press muéganos to shape them into a small ball. Let muéganos dry for at least 30 minutes and serve in cupcake liners.
