  • 2 cups cow's milk
  • 1 cinnamon stick
  • 4 egg yolks
  • 1/2 cups sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon vanilla essence
  • sugar, for caramelizing

  • Preheat oven to 356 ºF.
  • In a small pot, heat milk over medium heat. Add cinnamon stick. Set aside.
  • In a bowl, beat egg yolks with sugar. Add cornstarch and vanilla essence and keep beating until mixture slightly turns color.
  • In a pot, heat milk. Pour hot milk little by little into the previous mixture. Transfer mixture to a pot and cook until velvety and thick.
  • Pour mixture into tartlet pans and let cool.
  • On a baking sheet, place tartlet pans and dust top with a bit of sugar. Bake for 10 minutes until top is caramelized. Serve baked custard.
