  • 1 1/2 cups whipping cream
  • 1 tablespoon cornstarch
  • 3/4 tablespoons cocoa powder
  • 150 grams bittersweet chocolate
  • 4 egg yolks
  • 4 egg whites
  • 3/4 cups icing sugar
  • some butter, for greasing

  • Preheat oven to 392 °F.
  • In a saucepan over low heat, add whipping cream, cornstarch, cocoa, and bittersweet chocolate and cook for 3 minutes until completely dissolved.
  • Add egg yolks little by little. Cook for 3 minutes until thickened. Cook and set aside.
  • In a mixer, beat egg whites until fluffy. Add sugar little by little and mix until doubled in size.
  • Gently fold egg whites into egg yolks until completely incorporated.
  • Grease ramekins with butter and pour the previous batter up to the rim.
  • Bake for 10 minutes. Serve bittersweet chocolate soufflé immediately.
