Blueberry Lime Icebox Cake

Do you need a break from baking? This blueberry lime icebox cake is so easy to prepare that you don't even need to use the oven! Layers of vanilla cookies, homemade blueberry compote, and a creamy lime filling create an irresistible no-bake dessert anyone can make!

  • 2 cups blueberries, for the blueberry compote
  • 1/2 cups granulated sugar, for the blueberry compote
  • 1/8 cups water, for the blueberry compote
  • 2 tablespoons lime zest, for the blueberry compote
  • 1/2 cups lime juice
  • 1/2 cups evaporated milk
  • 2 cups condensed milk
  • 4 cream cheese, (27 oz)
  • some vanilla cookies, or cinnamon cookies
  • 1 cup blueberries
  • 2 lemons, sliced, for garnish
  • 1 lime, sliced, for garnish
  • peppermint, for garnish

  • For the blueberry compote: In a small pot over medium heat, cook blueberries, sugar, and water until reduced and thick. Remove from heat and add lime zest. Cool and reserve until ready to use.
  • For the lime filling: Blend lime juice, evaporated milk, condensed milk, and cream cheese. Reserve until ready to use.
  • Put a ring mold in a metal tray and add a layer of cookies. Spread lime filling over the cookies and top with blueberry compote and blueberries. Repeat until blueberry compote and lime filling are finished. Chill for 1 hour or until firm.
  • Unmold and garnish with lemon slices, lime slices, and peppermint leaves.
  • Serve at once cutting cake into slices
