  • In a bowl, mix butter and sugar.
  • Add eggs and vanilla essence. Mix thoroughly.
  • While mixing, add flour. Once half of the flour is completely incorporated, knead.
  • Cover cookie dough with plastic wrap and let rise for 1 hour in the fridge.
  • Preheat oven to 356 ºF.
  • Place cookie dough between 2 pieces of butcher paper and roll out with a rolling pin to 0.1-inch thickness.
  • Using a bunny cookie cutter, cut out bunny cookies and arrange them on a non-stick baking sheet.
  • Bake bunny cookies for about 15 to 20 minutes until golden brown and slightly soft. Let bunny cookies cool on a rack.
  • Divide vanilla royal icing into 2 bowls. Split 1 bowl of vanilla icing into 3 smaller portions. Spread vanilla icing all over bunny cookies.
  • Dye one small portion of vanilla royal icing with pink food coloring, a second portion with blue food coloring, and the last portion with purple food coloring.
  • Transfer pink royal icing to a piping bag and trace the bunny’s ears, tail, feet, and nose.
  • Transfer purple royal icing to another piping bag and trace the bunny’s whiskers.
  • Transfer blue royal icing to another piping bag and trace the bunny’s eyes.
  • Store bunny cookies in the fridge until royal icing hardens.
