  • Preheat oven to 356º F.
  • For the carrot cake: In a bowl, mix all the dry ingredients. Set aside.
  • In a mixer or bowl, whisk eggs with sugar and oil until doubled in size.
  • Add dry ingredients and shredded carrots and mix over low speed or fold into the previous mixture.
  • Pour batter over a parchment paper-lined baking sheet and bake for 10 minutes.
  • On a cheesecloth, sprinkle icing sugar and place warm carrot cake on top. Set aside.
  • For the frosting: In a mixer, add cream cheese, icing sugar, butter, and vanilla essence. Mix until a creamy consistency is obtained.
  • Using a silicone spatula, spread frosting over the carrot cake. Add a layer of chopped pecans and roll-up. Refrigerate for 15 minutes.
  • Cut rolled-up carrot cake into 0.7-inch slices.
  • In a plastic wrap-lined bowl, arrange carrot cake rolls around the edge until bowl is full.
  • For the mousse: In a bowl, mix cream cheese, sugar, and whipping cream for 5 minutes. Add hydrated and melted unflavored gelatin.
  • Pour mousse into the carrot cake roll-lined bowl until full. Refrigerate for 2 hours or until set.
  • Unmold and garnish carrot cake charlotte royale with a cream cheese rosette border.
