  • For the cake: Beat eggs, yolks, and sugar in a water bath until the mixture reaches 110 °F.
  • Remove from heat and beat until the egg and sugar mixture doubles in size.
  • Add flour little by little.
  • Place mixture on a greased and floured baking sheet lined with parchment paper.
  • Bake for 10 to 15 minutes at 400 °F until golden brown.
  • Remove from oven and sprinkle with icing sugar.
  • Unmold on parchment paper.
  • For the frosting: Beat sugar and yolks.
  • Melt chocolate.
  • Add dissolved cornstarch and beaten yolks to the milk and beat until thick. Let cool in the fridge.
  • Cream butter. Add melted chocolate and milk mixture to the creamed butter.
  • Spread frosting on top of the sponge cake and roll.
  • Garnish chocolate bûche de Noël with frosting making lengthwise lines to create a bark-like texture.
