Chocolate-Covered Mazapán

  • 1/3 cups water
  • 1 cup sugar
  • 1/4 teaspoons cream of tartar
  • 200 grams peanuts, toasted and finely ground
  • 1 teaspoon vanilla essence
  • 1 egg white
  • 1/4 cups icing sugar
  • 1 cup bittersweet chocolate, melted

  • In a pot over medium heat, heat water. Add sugar and cook over low heat until a syrup at soft-ball stage is obtained (240 °F).
  • Add cream of tartar and remove from heat. Add peanuts and vanilla essence, and mix.
  • Add egg white and cook for 5 minutes over low heat. Let cool.
  • Place previous preparation on a bowl and mix with icing sugar until mazapán is formed. Place on a plastic wrap-lined chopping board, cover with plastic wrap, and flatten to 1.5-inch thickness. Cut with a small round cookie cutter. Set aside.
  • Dip mazapán in melted chocolate. Let chocolate-covered mazapán cool on a rack and refrigerate for 10 minutes.
