  • 1 envelope lime gelatin
  • 1 cup cream cheese, for the lime gelatin
  • 1 cup condensed milk, for the lime gelatin
  • 1 cup evaporated milk, for the lime gelatin
  • 2 envelopes unflavored gelatin powder, hydrated and melted, for the lime gelatin
  • 1 cup strawberries, for the strawberry gelatin
  • 1 cup maraschino cherries, for the strawberry gelatin
  • 2 envelopes unflavored gelatin powder, hydrated and melted, for the strawberry gelatin

  • For the crust: Place cookies in a resealable bag. Crush with a rolling pin to a semi-fine powder. Set aside.
  • In a container, mix cookie powder, coconut, and butter until perfectly incorporated. Place on a 7.8-inch round pan. Using a spoon, press firmly to shape the crust. Set aside.
  • For the cheesecake: Mix cream cheese, icing sugar, vanilla essence, and whipping cream. Once well incorporated, add unflavored gelatin powder in an even stream.
  • Pour previous mixture into the pan up to ⅓ of its capacity. Refrigerate until set. Set aside.
  • For the lime gelatin: Mix lime gelatin in hot water. Set aside.
  • Combine cream cheese, condensed milk, and evaporated milk in the blender and blend until smooth. Add lime gelatin. Pour unflavored gelatin powder in an even stream.
  • Pour a thin layer of lime gelatin over the cheesecake and into the pan. Refrigerate until set. Pour another layer of cheesecake up to ¾ of the pan. Refrigerate until set.
  • For the strawberry gelatin: Combine strawberries and cherries in a blender and blend until smooth. Add unflavored gelatin powder in an even stream.
  • Pour over cheesecake. Refrigerate until set.
  • Unmold and garnish with lime slices and sugar pearls.
