  • 1 1/2 cups butter, at room temperature
  • 3/4 cups icing sugar
  • 1 egg
  • 1 egg yolk
  • 1 1/2 teaspoons vanilla essence
  • 4 cups flour
  • 1 teaspoon salt
  • 1 tablespoon food coloring, green
  • 1 cup white chocolate, cut into chunks, for garnish
  • 1 cup nonpareil sprinkles, Christmas colors, for garnish

  • Preheat oven to 338 °F.
  • For the cookie dough: Mix butter and sugar thoroughly. Add egg and egg yolk and mix thoroughly. Add vanilla essence, flour, and salt and mix until perfectly incorporated.
  • Remove cookie dough from the mixer and divide it in half. Set one half aside and add green edible food coloring to the other half. Wrap each cookie dough in plastic wrap and refrigerate for 40 minutes or until firm.
  • On a flat floured surface, roll out green cookie dough until it is 0.1-inches thick. Cut with a Christmas tree cookie cutter and set aside. Roll out colorless cookie dough and cut circles that are larger than the Christmas trees. Using the Christmas tree cookie cutter, cut off the center of the circles and place the green Christmas trees in the empty space.
  • Arrange cookies in a parchment paper-lined baking sheet. Refrigerate once again until very firm. Bake for 8 to 10 minutes, remove from oven, and let cool.
  • In a bowl, place white chocolate and melt in the microwave in 30-second intervals, stirring constantly to keep it from burning. Dip the edges of the cookies in white chocolate. Refrigerate for a couple of minutes and cover with nonpareils. Refrigerate once again until completely solid.
  • Serve Christmas tree cookies paired with a glass of milk.
