Churros with Mexican Chocolate Dipping Sauce

  • 1 2/3 cups water
  • 2 1/4 cups flour
  • 1/4 teaspoons salt
  • 1 teaspoon dry yeast
  • 3 eggs
  • some vegetable oil, for frying
  • 1/2 cups sugar, for coating
  • 2 tablespoons cinnamon powder
  • 1 cup Mexican chocolate
  • 1/2 cups whipping cream
  • 1 tablespoon vanilla essence
  • 1/4 cups sugar

  • For the churros: Heat water on a medium-sized pot over medium heat. Add flour, salt, and dry yeast at once. Mix thoroughly and stir constantly until the mixture doesn't stick to the walls. Transfer dough to another container and cool.
  • Add eggs and mix thoroughly. Let it rest and put the dough in a piping bag with a star nozzle. On a tray with parchment paper, make rings. Freeze until firm. Remove from the freezer.
  • Heat oil in a deep skillet over medium heat. Fry the frozen rings. Brown for 5 minutes. Place on paper towels to remove excess oil.
  • Mix sugar and cinnamon. Dip churros in the mixture and coat all sides.
  • For the Mexican chocolate dipping sauce: Combine Mexican chocolate, whipping cream, vanilla extract, and sugar in a blender and blend. Cook mixture in a pot over medium heat until it reduces and changes color. Serve churros and dip them in Mexican chocolate sauce.
