Cinnamon Roll Wreath

  • 60 milliliters cow's milk
  • 10 grams dry yeast, for the dough
  • 375 grams flour, for the dough
  • 60 grams sugar, for the dough
  • 9 grams salt, for the dough
  • 3 eggs, for the dough
  • 150 grams butter, for the filling
  • 1/2 cups butter, for the filling
  • 1/4 cups raw sugar, for the filling
  • 2 tablespoons cinnamon, for the filling
  • 1 cup pecans, finely chopped
  • 1 cup flour, for rolling
  • some egg yolk, for brushing
  • some icing sugar, for dusting

  • Preheat oven to 338 °F.
  • Hydrate yeast with milk. Let rest for 10 minutes. Set aside.
  • In a mixer, combine flour, sugar, salt, eggs, and milk with hydrated yeast. Knead to a homogenous dough.
  • Add butter little by little while mixing until completely incorporated and until an elastic dough is obtained. Place in a previously greased and floured bowl. Let rise for 4 hours in refrigeration or until it doubles its volume.
  • For the filling: Mix butter, raw sugar, and cinnamon.
  • On a floured surface and using a rolling pin, roll out dough until it is 0.1 inches thick. Add filling and pecans. Roll up and cut horizontally into two.
  • Make a braid by twisting both dough rolls. Place on a previously greased and floured tube pan. Brush with egg yolk. Let rise for 15 minutes. Bake for 30 minutes or until brown. Cool.
  • Dust cinnamon roll wreath with icing sugar.
