Citrusy Mini Yogurt Cheesecakes

  • 2 cups cream cheese
  • 1 cup Greek yogurt
  • 1 cup condensed milk
  • 1 teaspoon lime zest
  • 1 teaspoon vanilla essence
  • 1 cup mandarin orange, wedges, canned
  • 2 envelopes unflavored gelatin powder, 0.2 oz each  
  • 2 cups cinnamon cookies, for the crust
  • 1/2 cups butter, for the crust
  • mandarin oranges, wedges, for garnish 
  • leaves peppermint, for garnish

  • In a blender, combine mandarin oranges, condensed milk, Greek yogurt, and unflavored gelatin powder and blend until smooth.
  • Pour previous mixture into a cupcake pan up to ¾ of its capacity. Refrigerate until solid.
  • For the crust: In a plastic bag, place cookies. Using a rolling pin, crush cookies to a fine powder. In a bowl, mix crushed cookies and butter. Set aside.
  • Place cookie crust on top of the cheesecakes and refrigerate for 30 minutes.
  • Unmold citrusy mini yogurt cheesecakes and garnish with orange wedges and mint.
