  • 1 cup evaporated milk, for the coffee tres leches
  • 1 1/2 cups whole milk, for the coffee tres leches
  • 1 stick cinnamon, for the coffee tres leches
  • 1 tablespoon instant coffee, for the coffee tres leches
  • 3 tablespoons coffee liqueur, for the coffee tres leches
  • some whipped cream, for garnish
  • some bittersweet chocolate, shredded, for garnish

  • Preheat oven to 338 °F.
  • In a mixer, mix oil, sugar, eggs, pancake mix, milk, and baking powder.
  • Pour batter into a previously greased and floured rectangular pan. Bake for 30 minutes.
  • For the coffee tres leches: In a small pot, heat condensed milk, evaporated milk, whole milk, cinnamon, and instant coffee. Mix thoroughly, remove from heat, and add coffee liqueur. Let cool and set aside.
  • For assembling the coffee liqueur tres leches cake: Using a fork, poke sponge cake and pour tres leches mixture into it little by little so it is absorbed. Refrigerate for 30 minutes.
  • Spread whipped cream on top of the sponge cake. Garnish coffee liqueur tres leches cake with bittersweet chocolate and cut it into slices.
