  • 1/2 cups unsalted butter, cut into chunks
  • 50 grams bittersweet chocolate, cut into even chunks
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoons vanilla essence
  • 1 pinch salt
  • 2/3 cups flour
  • 225 grams cream cheese, soft and at room temperature
  • 1/3 cups sugar
  • 1 egg yolk
  • 1/4 teaspoons vanilla essence

  • Preheat oven at 356 ºF.
  • Grease a 7.8 inch-brownie pan.
  • For the brownie batter: In a pot, melt butter and chocolate over medium-low heat. Stir gently to keep from burning.
  • Once melted, remove from heat. Add 1 cup sugar, ½ teaspoon vanilla essence, and a pinch of salt. Mix thoroughly.
  • Add 2/3 cup of flour to the batter. Mix until perfectly incorporated.
  • Pour brownie batter into a greased pan.
  • For the cream cheese mixture: In a different bowl, combine cream cheese, 1/3 cup sugar, egg yolk, and ¼ teaspoon vanilla essence. Mix thoroughly.
  • Add cream cheese mixture on top of the brownie batter.
  • Using a knife or a silicone spatula, make swirls to create a marbled effect.
  • Bake cream cheese swirl brownies until edges puff a bit and the center is a bit firm for about 35 minutes.
