Easter Egg Cookies

  • 250 grams butter
  • 250 grams sugar
  • 1 teaspoon vanilla essence
  • 1 tablespoon salt
  • 1 teaspoon baking powder
  • 1 egg
  • 1 tub vanilla frosting
  • colorful button-shaped chocolates
  • food coloring, mix of colors

  • Preheat oven to 356 ºF.
  • Using a mixer, cream butter in a bowl. Add sugar. In another bowl, mix baking powder and flour. Set aside.
  • Add egg to the first bowl. Mix thoroughly. Add salt and vanilla essence.
  • Then gradually incorporate the flour mixture until a smooth dough remains.
  • Pour dry ingredients little by little into the first bowl and mix until a soft cookie dough is formed.
  • Divide cookie dough into 2 portions and store them in plastic bags. Refrigerate for 15 minutes.
  • On a flat surface, sprinkle a bit of flour and roll out cookie dough until it is about 1-inch thick.
  • Using an egg-shaped cookie cutter, cut out cookies.
  • For baking the cookies: On a previously greased and floured baking sheet or parchment paper-lined baking sheet, arrange cookies. Bake until edges are golden brown.
  • Remove from oven and let cool. Decorate cookies.
  • For decorating the Easter egg cookies: Divide vanilla icing into 2 portions. Add yellow food coloring to 1 portion.
  • Spread yellow icing over the cookie. Transfer vanilla icing to a piping bag and decorate Easter egg cookies with white icing stripes.
