  • Combine sifted flour, icing sugar, and butter cut into chunks in a food processor and grind for a few seconds until butter is completely incorporated.
  • Mix eggs, water, and vanilla essence. Add mixture to the food processor and grind for a few seconds until a cookie dough ball is obtained.
  • On a floured table, knead cookie dough for a few seconds until butter is evenly spread. Form a cookie dough ball.
  • Divide cookie dough into 2 portions. Place one cookie dough portion between two sheets of parchment paper. Knead and roll out dough until it is 0.1-inch thick. Repeat with remaining cookie dough and let cool for about 30 minutes in the freezer.
  • Remove cookie dough from the freezer. Using an oval cookie cutter, cut out cookie dough. Using a small-sized oval cookie cutter, cut out half of the cookies right in the middle.
  • On a previously greased baking sheet, bake cookies at 374 ºF for 12 minutes. Remove from oven and let cool.
  • Fill cookies without holes with jam and sprinkle icing sugar over holed-out cookies. Press jam-filled cookies with holed-out cookies together to form a sandwich. Repeat until all the cookies are used up. Serve Easter egg jam-filled cookies.
