  • 2 cups sugar
  • 1/2 cups cocoa powder
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 1/2 cups cow's milk
  • 1/2 cups butter, softened
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 1/2 teaspoons salt
  • 3 cups icing sugar, for the frosting
  • 250 grams bittersweet chocolate, for the frosting
  • 6 tablespoons butter, for the frosting
  • 6 tablespoons water, for the frosting
  • some apricot jam

  • In a container, mix flour, sugar, cocoa, baking powder, baking soda, and salt. Mix over low speed using a mixer.
  • Add milk, butter, and vanilla essence. Using a mixer, mix over low speed. Beat over medium speed for 2 minutes. Add eggs and beat for 2 more minutes. Pour into a greased and floured 8.6-inch round baking pan.
  • Bake at 356 °F for 30 or 35 minutes. Remove from the oven and let cool in a rack for 10 minutes. Unmold and cool completely.
  • For the frosting: Melt chocolate and butter over low heat. Remove from heat and add icing sugar and hot water, stirring constantly. If needed, add more water to obtain the right consistency.
  • Frost easy chocolate cake and let drip on the sides to cover completely.
