Fluffy Corn Cupcakes

  • 1 1/2 cups flour, for the batter
  • 2 teaspoons baking powder, for the batter
  • 250 grams corn kernels, for the batter
  • 3 eggs, for the batter
  • 380 grams condensed milk, one can, for the batter
  • 1/2 cups vegetable oil, for the batter
  • 3 teaspoons vanilla essence, for the batter
  • some icing sugar, for garnish

  • Preheat oven to 356 ºF.
  • For the cupcakes batter: In a blender, combine flour, baking powder, corn kernels, eggs, condensed milk, oil, and vanilla essence. Blend to a smooth and slightly thick batter. Set aside.
  • Place cupcake liners in a cupcake pan and pour ¾ of cupcake batter into each liner. Tap the cupcake pan to release air from batter and bake for 20 minutes. Let cool and set aside.
  • Dust corn cupcakes with icing sugar.
