German Spritz Cookies (Spritzgebäck)

  • 380 grams butter, softened
  • 250 grams icing sugar
  • 1 teaspoon vanilla essence
  • 1 pinch salt
  • 500 grams sifted flour
  • 125 grams almonds, or pecans
  • 100 grams bittersweet chocolate, or milk chocolate

  • Preheat oven to 356 ºF.
  • Line 2 or 3 baking sheets with parchment paper. In a bowl, combine butter and beat until soft. Add sugar, vanilla essence, and salt. Mix until sugar is dissolved. Add 2/3 of flour little by little while mixing.
  • Add remaining flour and almonds. Mix until a smooth dough is formed. Transfer dough to a piping bag and form 2.9-inch-long pieces or the shape of your choice (heart, circle, etc.) on baking sheets.
  • Bake for 12 minutes or until golden brown and transfer to a rack. Melt chocolate in a water bath. Dip German Spritz Cookies in chocolate and cover half of it. Transfer to a rack and let dry.
