Gingerbread Men Cookies with Nutella

  • 1 cup butter, at room temperature
  • 3/4 cups sugar
  • 1/4 cups honey
  • 1 egg yolk
  • 3 cups flour
  • 1 teaspoon ginger powder
  • 1 teaspoon cinnamon
  • 5 tablespoons nutella
  • 1 cup icing sugar, for the icing
  • 3 tablespoons lime juice, for the icing
  • bittersweet chocolate, melted

  • Preheat oven to 356 ºF.
  • In a mixer, cream butter, sugar, honey, and egg yolk.
  • Add flour into the mixture little by little, ginger powder, and cinnamon. Mix until a dough is formed. Cover with plastic wrap and refrigerate for 20 minutes.
  • On a floured surface, roll out dough until it is 0.1-inch thick. Using a gingerbread man-shaped cookie cutter, cut 10 cookies.
  • Transfer to a baking sheet and bake for 15 minutes. Let cool and set aside.
  • Make cookie sandwiches by spreading Nutella on a cookie and placing another cookie on top. Set aside.
  • For the icing: Mix icing sugar with lime juice. Transfer icing to a piping bag with a nozzle. Garnish cookies with frosting and melted chocolate. Let dry.
  • Serve gingerbread cookies with Nutella with a glass of milk.
