Healthy Lime Tart

  • 1/4 cups shredded coconut, for the crust, 1.7 oz
  • 1 1/2 cups dates, for the crust, 10.5 oz
  • some coconut oil, spray, for greasing
  • 2 1/2 cups Greek yogurt, unsweetened, for the filling
  • 1/2 cups requesón, low-fat, for the filling
  • 1/2 cups coconut milk, for the filling
  • 1/2 cups lime juice, seedless, for filling
  • 3 tablespoons honey, for the filling
  • 1 tablespoon lime zest, for the filling
  • 28 grams unflavored gelatin powder, hydrated and melted, 0.2 oz each, for the filling

  • some blueberries, for garnish

  • For the crust: Combine almonds, shredded coconut, and dates in a food processor and grind for 5 minutes until a doughy mixture is formed.
  • Grease a tart pan with coconut cooking spray. Line the pan with plastic wrap and pour ground dried fruits mixture. Press firmly with your hand to shape the crust. Refrigerate for 20 minutes or until the mixture hardens. Set aside.
  • Combine Greek yogurt, requesón, coconut milk, lime juice, honey, and lime zest in a blender and blend on medium speed until incorporated. Reduce speed, remove the jar lid, and pour in hydrated unflavored gelatin powder in an even stream. Blend until perfectly incorporated.
  • Pour previous mixture over the crust. Refrigerate until set.
  • Once set, garnish healthy lime tart with lime wheels and blueberries. Serve cold.
