  • 7 pieces of bread, stale, cut into cubes
  • 2 cups cow's milk
  • 1/2 cups sugar
  • 5 eggs
  • 1 teaspoon vanilla essence
  • 90 grams butter, melted
  • 1/4 cups lime juice
  • 2 limes, zest
  • 1 cup icing sugar, for the glaze
  • 4 tablespoons lime juice, for the glaze

  • Preheat oven to 356 °F.
  • For the bread pudding: Place bread in a bowl and soak in milk for 10 minutes or until perfectly soaked.
  • Add sugar, egg, vanilla essence, butter, lime juice, and lime zest. Mix until incorporated.
  • Pour mixture into a previously greased and floured pan. Bake for 35 minutes. Cool and set aside.
  • For the glaze: Mix sugar and lime juice.
  • Pour glaze on top of bread pudding. Let dry for 5 minutes. Garnish with lime zest.
  • Serve key lime bread pudding with a cup of coffee.
