Key Lime Donuts

  • 1 cup cookies, ground, for the dough 
  • 1 tablespoon dry yeast, for the dough
  • 1 teaspoon salt, for the dough
  • 3/4 cups sugar, for the dough
  • some lime zest, for the dough
  • 1/2 cups condensed milk, for the dough
  • 3/4 cups whole milk, for the dough
  • 4 eggs, for the dough
  • some vegetable oil
  • 2 cups icing sugar, for the glaze
  • 3 tablespoons lime juice, for the glaze
  • some lime zest, for garnish
  • some cookies, cut into chunks, for garnish

  • In a bowl or mixer, mix flour, ground cookies, yeast, salt, sugar, and lime zest. Add condensed milk, whole milk, and eggs. Knead until all the ingredients are completely incorporated. Add butter little by little until completely incorporated.
  • Transfer dough to a previously greased baking sheet and cover. Let dough sit for 1 hour until it doubles in size. Punch down dough to let air out and roll out to 0.5-inch thickness. Cut the dough to form the donuts and let sit for 30 minutes until they double in size.
  • Deep-fry donuts in oil and drain on a paper towel-lined plate to remove excess oil. Let cool.
  • For the glaze: In a bowl, mix icing sugar and lime juice until a semi-liquid consistency is obtained. Dip one side of the donut in the lime glaze and sprinkle with cookie chunks and lime zest. Let glazed lime pie donuts dry for a few minutes and pair with a drink.
