Key Lime Icebox Wreath

  • 5 cups cream cheese
  • 2 cups condensed milk
  • 3 tablespoons lime juice
  • 2 tablespoons lime zest
  • 3 packages María cookies, 6.7 oz each
  • 5 egg whites, for the meringue
  • 1 1/2 cups granulated sugar, for the meringue
  • some María cookies, mini, for garnish
  • some lime, and lemon, cut into wheels, for garnish

  • For the filling: In a bowl, mix cream cheese, condensed milk, lime juice, and lemon zest until smooth.
  • In a plastic wrap-lined bundt cake pan, place a layer of María cookies and top with a layer of filling. Repeat the layers until the pan is full. Refrigerate for 1 hour.
  • For the meringue: Whisk the egg whites until doubled in size. Add sugar gradually and mix until a firm meringue is formed.
  • Unmold and cover with meringue peaks. Using a kitchen torch, lightly torch meringue over medium heat making sure not to burn it.
  • Garnish key lime icebox wreath with María cookies and lime wheels.
