  • 2 cups flour, for the dough

  • 1 egg yolk, for the dough
  • 1 cup flour, for flouring
  • 8 egg yolks, for the filling
  • 1 1/2 cups sugar, for the filling
  • 6 tablespoons cornstarch, for the filling
  • 4 tablespoons butter, melted, for the filling
  • 1/4 cups lime juice
  • 4 egg whites, for the French meringue
  • 1 1/2 cups sugar, For the French meringue
  • 1 lime, zest

  • Preheat oven to 356 °F.
  • For the dough: In a mixer, add flour, salt, sugar, butter, and yolks. Mix to a homogenous dough.
  • Place dough on plastic wrap. Let cool for 15 minutes.
  • For the filling: In a bowl, add yolks, sugar, cornstarch, butter, and lime juice. Mix until incorporated. Set aside.
  • On a floured surface, roll out dough. Cut to pie pan size.
  • Pour previous preparation on the pie crust.
  • Bake for 40 minutes. Cool. Set aside.
  • Mix egg whites and lime zest. Add sugar little by little until the mixture doubles its volume and the meringue turns glossy.
  • Add meringue on top of the key lime pie. Using a kitchen torch, torch meringue until golden-brown.
  • Let cool. Pair key lime pie with a cup of coffee.
