  • 1/2 cups unflavored gelatin powder, hydrated and melted, for the lime icebox cake gelatin

  • In a blender, combine cream cheese, lime juice, evaporated milk, condensed milk, and unflavored gelatin in an even stream and blend until smooth.
  • In a silicone mold, arrange a layer of María cookies. Top with a bit of blended mixture. Repeat the layers until the mold is full. Refrigerate until set, unmold, and cut into medium-sized cubes.
  • In a blender, combine evaporated milk, cream cheese, lime juice, condensed milk, and food coloring. Add unflavored gelatin in an even stream and blend until smooth.
  • In a previously greased gelatin mold, pour lime cracker pie cubes and pour creamy gelatin mixture on top. Refrigerate until completely set and unmold.
  • Serve lime icebox cake gelatin garnished with whipped cream, lime wheels, and María cookies.
