  • 2 cups water
  • 2 liters cow's milk
  • 1 1/2 cups rice
  • 1 cinnamon stick
  • 1/4 teaspoons salt
  • orange peels
  • 1 tablespoon lime zest
  • 1 tablespoon orange zest
  • 1 cup granulated sugar
  • 2 tablespoons vanilla essence
  • 2 envelopes unflavored gelatin powder, hydrated and melted, 0.2 oz each

  • In a small pot, heat water, and milk over medium heat. Add rice, cinnamon stick, salt, orange peel, orange zest, lime zest, and granulated sugar and mix thoroughly. Add vanilla essence and cook until rice is tender.
  • Remove from heat and add hydrated and melted unflavored gelatin. Pour previous mixture into a previously greased mold. Refrigerate for 1 hour or until set.
  • Unmold Mexican rice pudding gelatin. Serve Mexican rice pudding gelatin garnished with cinnamon sticks.
