  • 1 cup margarine, 7 oz
  • 200 grams dark chocolate
  • 2 eggs
  • 1 cup sugar, 7 oz
  • 1/2 teaspoons vanilla essence
  • 2/3 cups flour, 3.5 oz
  • 1/2 cups pecans, chopped, 1.7 oz
  • 50 grams icing sugar
  • 1/2 cups whipping cream, 3.3 oz
  • 250 grams bittersweet chocolate
  • 1/2 teaspoons peppermint

  • Preheat oven to 356 ºF.
  • For the chocolate mint brownies: Microwave butter and chocolate chunks for 15-second intervals until melted.
  • In a mixer, add two eggs and mix on high speed. Add vanilla essence and sugar little by little while still mixing.
  • Remove chocolate from microwave and mix thoroughly.
  • Add melted chocolate to the mixer little by little. Add flour and pecans. Mix until perfectly incorporated.
  • Grease and flour pan with cooking spra
  • Pour brownies batter into the pan.
  • Bake for 30 minutes.
  • Remove from the oven and let cool.
  • In a glass bowl, combine dark chocolate chunks, whipping cream, and a few drops of mint essence.
  • Microwave for 15-second intervals until chocolate melts.
  • Remove from microwave and mix to a ganache.
  • Unmold brownies and transfer to a chopping board. Spoon chocolate ganache over brownies. Use a silicone spatula to completely cover the brownies. Cut the edges from the brownies. Cut brownies into 1.9 x 1.9-inch squares. For a pop of color, garnish mint chocolate brownies with raspberries.
