  • 2 cups cookies, orange flavored
  • 1 cup butter
  • 1 envelope cherry gelatin, 0.8 oz
  • 2 cups water, hot
  • 3 packages cream cheese, 6.7 oz
  • 1 cup whipping cream
  • 1 can condensed milk
  • 2 envelopes unflavored gelatin powder, 0.2 oz each, hydrated and melted
  • 1 tablespoon orange zest
  • 1/4 cups orange juice

  • In a food processor, grind orange cookies for 5 minutes until a fine powder is obtained. In a bowl, mix butter and powdered orange cookies.
  • Pour previous preparation into a cake pan. Using a spoon, spread and press tightly to form a crust. Refrigerate.
  • In a bowl with hot water, dissolve cherry gelatin. Pour into a container and refrigerate for 2 hours or until set. Unmold, cut into small-sized cubes, and set aside.
  • Repeat for the lime gelatin.
  • For the cheesecake: In a bowl, mix whipping cream, condensed milk, orange zest, and orange juice. Add hydrated unflavored gelatin little by little.
  • Pour mixture over the cookie crust. Add cherry and lime gelatin cubes. Refrigerate for 2 hours or until set. Serve mosaic gelatin cheesecake.
