Nogada Glazed Donuts

Mexican cuisine has no boundaries and here are these glazed nogada donuts to prove us right! This classic Pueblan recipe created in a convent to celebrate Mexico’s Independence has no match in flavor and texture! Prepared with drool-worthy ingredients like cream cheese, goat cheese, walnuts, whole milk, and vanilla essence and garnished with mouthwatering pomegranate, these nogada glazed donuts are a culinary delight that you cannot miss!

  • 2 cups flour, for the dough 
  • 1 teaspoon dry yeast, for the dough 
  • 1 3/4 cups whole milk, for the dough 
  • 3/4 cups sugar, for the dough 
  • 1/2 teaspoons salt, for the dough 
  • 1/4 cups butter, for the dough 
  • some vegetable oil, for the nogada glaze
  • 1 cup cream cheese, for the nogada glaze
  • 1/4 cups goat cheese, for the nogada glaze
  • 1 teaspoon vanilla essence, for the nogada glaze
  • 1/2 cups walnuts, for the nogada glaze
  • 1/4 cups icing sugar, for the nogada glaze
  • 1/2 cups whipping cream, for the nogada glaze
  • 1 cup pomegranate, for garnish

  • In a mixer with a C-shaped dough hook attachment, mix flour, dry yeast, milk, sugar, and salt until a homogeneous mixture is obtained. Add butter and mix for 15 more minutes or until softened.
  • Transfer dough to a previously greased bowl and cover with plastic wrap. Let rise for 1 hour until doubled in size.
  • Punch down dough and flour a flat surface. Roll out the dough with a rolling pin to 0.3-inch thickness. Cut dough into large discs. Cut out donut holes to form the donuts. Transfer donuts to a baking sheet and let proof for 10 minutes.
  • In a pot, heat plenty of oil and fry each donut for 5 minutes. Turn constantly spooning oil over the donuts. Remove donuts and place on a paper towel-lined baking sheet to remove excess oil.
  • For the nogada glaze: In a blender, mix cream cheese, goat cheese, vanilla essence, icing sugar, walnuts, and whipping cream and blend until smooth.
  • Coat donuts with nogada glaze and garnish with pomegranate. Serve nogada glazed donuts.
