  • For the pastry: In a bowl, mix vanilla, egg yolk, and cold water with a fork. Set aside.
  • In a bowl, mix flour, salt, and sugar. Cut cold butter into cubes and add it to the bowl. Mix with your hands until a crumbly consistency is obtained.
  • Add previous egg yolk mixture and mix with a mixer until a smooth and sticky pastry is formed. Add a bit more flour or water if necessary.
  • Grease a 9-inch tart pan with removable bottom and place the pastry in it with your hands or a spoon. The crust must be about 0.3-inch high. Trim the edges of the pastry to fit the pan.
  • Preheat oven to 347 °F.
  • For the filling: Wash, rinse, and cut rhubarb into chunks of about 0.7 inches.
  • In a large bowl, mix water, flour, and sugar. Pour mixture and rhubarb into the tart pan.
  • For the crumble: In a large bowl, mix butter, flour, sugar, oatmeal, and cinnamon. Mix thoroughly by hand until a coarse crumbly texture is obtained.
