  • 1 cup pecans, chopped
  • 1 cup unsalted butter, at room temperature 
  • 2 cups sugar
  • 6 eggs
  • 1 teaspoon vanilla essence
  • 1/2 teaspoons cinnamon
  • 3 cups flour
  • 1/4 teaspoons baking soda
  • 1/4 teaspoons salt
  • 1 cup sour cream
  • 1 tub vanilla frosting, for garnish
  • 1/2 cups rainbow sprinkles

  • Preheat oven to 356 ºF. Grease and flour a mini cake pan with removable bottom.
  • Put the butter and sugar in a mixer and beat until creamy. Add the eggs, one at a time, beating well. Add the vanilla extract and walnut.
  • In a mixer, add butter and sugar and mix until creamy. Add eggs one by one and mix thoroughly. Add vanilla essence and pecans.
  • In another bowl, mix flour, salt, and baking soda. Pour half of the flour mixture into the eggs mixture. Add half of the sour cream. Mix thoroughly over low speed. Repeat until all the ingredients are completely incorporated. Add chopped pecans.
  • Pour batter into the previously greased pan. Bake for about 50 minutes until golden brown or until a toothpick inserted in the center comes out clean. Let cool on a rack for 10 minutes.
