  • 1/2 cups sugar
  • 1/8 teaspoons salt
  • 1 cup butter, 5.6 oz
  • 1 egg yolk
  • 1 teaspoon vanilla essence
  • 2 tablespoons water, 5.4 oz

  • 1 egg, for brushing
  • 1 cup nonpareil sprinkles

  • Preheat oven to 356 ºF.
  • On a clean surface, pile flour into a mound and add salt and butter. Using a scraper, mix ingredients until the mixture resembles coarse crumbs.
  • Add egg yolk, vanilla essence, and water. Knead until a homogeneous dough is formed. Cover dough with plastic wrap and refrigerate for 20 minutes.
  • On a floured surface, use a rolling pin to roll out dough until it is 0.1-inch thick. Cut cookies with a round cookie cutter.
  • Place in a tray, varnish with egg and sprinkle with multi-color sprinkles, refrigerate 20 minutes more.
  • Bake for 25 minutes and let cool.
  • Serve sprinkle cookies with a cup of café de olla.
