Strawberry Frozen Yogurt Pie

  • 1 cup whipping cream, 8.8 oz, for the filling
  • 1/2 cups strawberry jam, for the filling
  • 1/4 cups condensed milk, 10.7 oz, for the filling
  • 2 tablespoons unflavored gelatin powder, for the filling
  • 1 cup strawberries, for the filling
  • 2 cups strawberries, cut into quarters, for the filling

  • some peppermint, for garnish

  • For the crust: Place cookies in a plastic bag and crush them with a rolling pin. In a bowl, mix crushed cookies, pecans, butter, and vanilla essence thoroughly until a pliable dough is formed.
  • In a baking dish, place one part of the previous mixture and flatten to form a crust. Refrigerate for 20 minutes.
  • For the filling: In a blender, combine Greek yogurt, whipping cream, strawberry jam, condensed milk, vanilla, strawberries, and hydrated unflavored gelatin until a homogenous mixture is obtained. Set aside.
  • Pour previous mixture on top of the cookie crust. Arrange sliced strawberries. Let cool for 5 minutes. Add the remaining yogurt mixture little by little until completely covered. Place more strawberries slices and refrigerate until solid.
  • Garnish strawberry frozen yogurt pie with remaining cookie crust mixture, strawberries, and peppermint.
